The proportions and ingredients can be adjusted, so don\u2019t worry about being precise! ????<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<p>Water<\/p>\n\n\n\n<p>1 cup red (or other) lentils<\/p>\n\n\n\n<p>Sesame (or other) oil<\/p>\n\n\n\n<p>1 large zucchini or other squash<\/p>\n\n\n\n<p>1\/2 large onion<\/p>\n\n\n\n<p>1 bell pepper<\/p>\n\n\n\n<p>1\/2 bag of frozen corn<\/p>\n\n\n\n<p>(Choose whichever vegetables you like \u2014 these are the ones I use)<\/p>\n\n\n\n<p>Salt<\/p>\n\n\n\n<p>Black pepper<\/p>\n\n\n\n<p>Cayenne pepper<\/p>\n\n\n\n<p>Granulated garlic<\/p>\n\n\n\n<p>Berbere (I use 365 brand \u2014 you can substitute ?)<\/p>\n\n\n\n<p>Curry powder (I use 365 brand Muchi Curry \u2014 you can substitute ?)<\/p>\n\n\n\n<p>Oregano<\/p>\n\n\n\n<p>Dill<\/p>\n\n\n\n<p>Sage<\/p>\n\n\n\n<p>(Again, you don\u2019t have to use these spices \u2014 ginger powder, crushed red pepper or other chilies, fresh herbs, and turmeric powder are also good choices)<\/p>\n\n\n\n<p>Rinse the lentils, cover them with water, and turn the stove to high heat until the water boils. Then turn the stove down to keep the water boiling but stop it from boiling over. You&nbsp; may need to remove foam from the water. Stir occasionally as you cook the vegetables, and add water if the water doesn\u2019t cover the lentils. When the lentils are soft and slightly disintegrating, remove the lentils from the heat.<\/p>\n\n\n\n<p>Meanwhile, chop the vegetables; put a different large pan with oil on medium-high heat, and saut\u00e9e the onion until the pieces turn slightly translucent or brown, then add the bell pepper and zucchini. You may need to reduce the heat. When they\u2019ve softened, add the corn and any other less firm vegetables, and herbs. When you\u2019ve added all the vegetables, add enough spices to spice both the vegetables and the lentils. (I also add some salt and berbere to the lentils.) You may need to taste-test to get the amount you prefer.<\/p>\n\n\n\n<p>Stir the vegetables until they\u2019re cooked. Once the lentils are done as well, add one to the other.<\/p>\n\n\n\n<p>And you\u2019re done!
