This is an easy, tasty recipe that can be adjusted to make however many or few pancakes you want!
For 1 tiny pancake:
1T flour
1/2t sugar
1/4t sunflower (or other) oil plus extra for the pan
A tiny amount of baking powder
A tiny amount of salt
1/2T water or soy milk
For 6 medium pancakes:
1/2 cup flour
4t sugar
2t oil plus extra for the pan
1/4t baking powder
1/8t salt
1/2 cup water or soy milk
Chocolate chips (optional — look for fair-trade vegan ones)
A banana (optional)
Blueberries (optional)
Stir together the dry ingredients, add the oil and however much water you need to get the consistency you want, and add chocolate and/or fruit if you want.
Put a pan or skillet with oil on the stove on medium-low heat, pour the batter into circles, and flip the pancakes when one side is browned. Remove them when they’ve been cooked the amount you like.
